Fresh Golden Snapper often has a mix of silvery bronze red color and a black blotch above the lateral line two thirds of the way down from head to tail. Called “Ang Zhor” (Hokkien Name) in Singapore, their meat has a super tender taste with a sweet, mild flavor.
